BALSAMIC LENTILS W/ ROSEMARY POTATOES

Ingredients

400g potatoes, cubed or is small cut lengthways

1 tablespoon Organic Olive Oil, Extra Virgin Cold-Pressed

sea salt and pepper to taste

1 can Organic Brown Lentils

2 large handfuls arugula or other greens

2 tablespoons Organic Olive Oil, Extra Virgin Cold-Pressed

2 tablespoons Organic Coconut Balsamic Dressing

2 cloves garlic, minced

2 teaspoons finely chopped fresh rosemary

sea salt and pepper, to taste

Method

Preheat your oven to 180°C.

Place your potatoes on a lined baking tray and drizzle over with olive oil season with sea salt and pepper. Bake for 30-40 minutes or until browned.

While your potatoes are baking, add the remaining ingredients to a serving bowl and leave to sit. This will allow the flavours to develop.

Once your potatoes are done, add these to your lentil and greens mix, mix gently. Serve with a drizzle of olive oil, a squeeze of lemon juice and a handful of Paleo Savoury Mix.

You can serve this immediately or chill it down, serve it cold or keep it for lunches during the week.
