MEGA CHOCOLATE CARAMEL SLICE

Ingredients

BASE

¾ cup Organic RAW Whole Almonds

⅓ cup Organic Coconut, Shredded

6 Organic RAW Pitted Dates (soaked in boiling water for 15 minutes)

¼ cup Organic RAW Virgin Coconut oil (melted)

CARAMEL

1¼ cup Organic RAW Pitted Dates

⅓ cup Organic Almond Butter

3 tablespoons Organic Tahini, Unhulled

2 tablespoons Organic Brown Rice Malt Syrup

2 teaspoons vanilla bean powder

CHOCOLATE LAYER

⅓ cup Organic RAW Cacao Powder

¼ cup Organic RAW Virgin Coconut oil (melted)

½ cup Organic Brown Rice Malt Syrup

Method

To make the base, place all your base ingredients in a food processor and process for 1-2 minutes your mixture is well combined. It should start to come away from the edge of the bowl at this point and when pressed between your fingers, the mixture should hold together.

Press the mixture into the base of a standard loaf tin lined with grease proof baking paper and pop in the freezer to set while you make the caramel.

To make the caramel, add all caramel ingredients to a food processor and process for 1-2 minutes or until smooth. You will need to stop and scrape down the sides of the bowl occasionally so your mixture is super smooth.

Spread the caramel over the base and return to the freezer.

To make the chocolate layer, add all ingredients to a bowl and whisk until smooth. Pour over the caramel layer and pop in the fridge for an hour to set. Then slice up and eat!
