140g Organic Quinoa Flour

120g Organic RAW Whole Almonds

2 teaspoons Supernatural Foods Raising Powder (baking powder)

½ teaspoon ground nutmeg

½ teaspoon ground cloves

½ teaspoon ground ginger

½ teaspoon Ground Cinnamon

190g Organic Demerara Brown Sugar

½ teaspoon Organic Guar Gum

a pinch of Natural Sea Salt

3 free-range eggs (beaten)

3 medium-size bananas (lightly mashed)

1 teaspoon Organic Vanilla Extract

100ml Organic Coconut Oil, High Heat Cooking (melted)


Preheat oven to 170°C and line a 22 cm loaf tin with baking paper.

Mix all dry ingredients (first 10) in a bowl.

In another bowl, mix together all remaining wet ingredients. Pour into the dry mix and stir until just combined.

Transfer mixture into prepared loaf tin and bake for approximately 1 hour, or until a toothpick inserted into the centre comes out clean. Allow to cool for 15 minutes before turning out onto a wire rack to cool completely.

The cake is ready to eat right away, but it will be more firm and moist after cooling.
